Baked sweet potato with tofu and sprouts

Baked sweet potato with tofu!! I am a big lover of sweet potato, so I made these baked sweet potatoes and they were so yummyđ đ They are so easy, delicious, vegan and healthy.

Ingredients (2 portions):
1. 1 sweet potato
2. Juice from 2 lime
3. 2 tablespoons soy sauce
4. 1/4 teaspoon salt
5. 1/4 teaspoon garlic powder
6. 1/4 teaspoon paprika powder
7. 1/4 teaspoon maple syrup
8. 1 ripen avocado
9. 2 tablespoons soy yoghurt
10. 1 teaspoon salt
11. 1 teaspoon black pepper
12. 1 teaspoon olive oil
13. Half cup green coriander
14. Half cup fresh mint
15. Half cup soft crumbled tofu
16. Half cup sprouts
17. 1 clove finely chopped garlic
Method:
Pre-heat the oven to 200 degree Celsius. Chop the sweet potato into 4 pieces (make 1 cut horizontally and 1 cut vertically)
In a bowl, add lime juice of 1 lime, 1 tablespoon soy sauce and 2 tablespoons water and place the crumbled tofu and let it rest for 20-30 minutes.
While the tofu is getting marinated, in another small bowl, add juice from half lime, 1 tablespoon soy sauce, maple syrup, salt, garlic powder, 1/2 teaspoon olive oil and paprika powder and mix well.
Take a brush and rub it well on all the sides of sweet potato pieces without peel and let it rest for 5 minutes.
Bake the marinated sweet potatoes for 20 minutes. Now, take them out and place the marinated crumbled tofu (save 2 tablespoons crumbled tofu for the topping) and bake for another 10 minutes.
In the meanwhile, in a blender add avocado, yoghurt, mint and coriander and blend well until you get a smooth avocado paste.
When sweet potatoes are fully baked, add the avocado paste on the top of baked tofu and add some sprouts. Add, some more crumbled tofu on the top and sprinkle a few drops of olive oil on each of the sweet potato pieces.
Top it with some more black pepper powder and a leaf of mint, as shown in the picture and serve.
