Sweet Potato Protein Brownie

Sweet tooth cravings but don’t want to feel guilty after eating? Try this refined sugar free high protein brownie

Ingredients (2 portions):


  1. 1 big sweet potato

  2. 1 medium sized banana

  3. 2 teaspoons baking powder

  4. 1/4 teaspoon salt

  5. 1 tablespoon cocoa powder

  6. 2 tablespoon blueberries

  7. 2 tablespoon raspberries

  8. 2 egg whites (vegans can use 4 tablespoons of vegan yoghurt )

  9. 1 tablespoon peanut butter

Sides:


  1. Strawberries

  2. Low calorie vegan ice cream (optional)


Method:


  • Preheat the oven to 200 degree Celsius

  • Cut sweet potato to 3-4 pieces horizontally and bake the sweet potato for 40 mins in the preheated oven (can also boil). You should be able to easily take off the peal and get a sweet potato purée

  • Transfer the purée to a medium sized bowl, add the banana and mesh it

  • Add eggs/vegan yoghurt, baking powder, cocoa powder, protein powder, peanut butter, salt and berries and whisk them until smooth

  • Transfer the mixture to a baking tray and bake for 20-22 minutes at 200 degree Celsius

  • 6. Serve it warm with straw berries and low fat vegan ice cream
