Vegan Buddha Bowl

Ingredients (2 portions):


1. 1 medium sized chopped broccoli

2. 1 chopped tomato

3: 5-6 sticks of chopped asparagus

4. 150 gm chopped mushrooms

5. Half cup chopped cucumber

6. 2 garlic cloves finely chopped

7. 1 teaspoon ginger finely chopped

8. 1 teaspoon coriander powder

9. 2 teaspoons paprika powder

10. Salt as per taste

11. Half teaspoon black pepper

12. 3 tablespoons Greek yoghurt/soy yoghurt

14. 50 gm chopped pepper



Method:


  • Chop all the vegetables coarsest except ginger and garlic. Ginger and garlic should be finely chopped

  • In a bowl, add paprika powder, salt, black pepper, chopped ginger and garlic, and coriander powder. Mix well

  • Add chopped broccoli, asparagus, chick peas and mushrooms to the paste and coat them well with the marination paste

  • Bake them in a pre-heated oven for 20 mins at 200 degree Celsius

  • In a pan, roast mushrooms and pepper for 2-3 mins in a medium flame.

  • Serve the marinated and baked vegetables and chick peas together with dry roasted mushrooms, fresh cucumber and tomato
