Ingredients (2 portions):
1. 1 medium sized chopped broccoli
2. 1 chopped tomato
3: 5-6 sticks of chopped asparagus
4. 150 gm chopped mushrooms
5. Half cup chopped cucumber
6. 2 garlic cloves finely chopped
7. 1 teaspoon ginger finely chopped
8. 1 teaspoon coriander powder
9. 2 teaspoons paprika powder
10. Salt as per taste
11. Half teaspoon black pepper
12. 3 tablespoons Greek yoghurt/soy yoghurt
14. 50 gm chopped pepper
Method:
Chop all the vegetables coarsest except ginger and garlic. Ginger and garlic should be finely chopped
In a bowl, add paprika powder, salt, black pepper, chopped ginger and garlic, and coriander powder. Mix well
Add chopped broccoli, asparagus, chick peas and mushrooms to the paste and coat them well with the marination paste
Bake them in a pre-heated oven for 20 mins at 200 degree Celsius
In a pan, roast mushrooms and pepper for 2-3 mins in a medium flame.
Serve the marinated and baked vegetables and chick peas together with dry roasted mushrooms, fresh cucumber and tomato
